Plant of Guar Gum
Guar gum, obtained from the endosperm of the guar seed (Cyamposis Tetragonolobus), has been used by humans for a long time, originally as a replacement of locust bean gum. The guar plant has a long history in the Indian subcontinent, where it is an important source of nutrition to animals and humans.It is extremely drought-resistant and grows in semiarid regions where most other plants perish.
The gum obtained from the guar plant is a hydrocolloidal polysaccharide of high molecular weight, composed of galactan and mannan units combined through glycosidic linkages (chemically described as galactomannan). It is a white to yellowish powder, with a slight odor, and is soluble in hot/cold water.
